If you found me via the Ultimate Blog Party, Welcome! I’m so excited to introduce you to my website. If you have no idea what I’m talking about, head over to 5 Minutes for Mom and you will see the blogosphere’s biggest party hosted on their site. Last year, over 2000 blogs linked up. If you like discovering new blogs, that’s the place to be.

Just Doing My Best’s mission is to provide practical tips, ideas and recipes for families while reminding you that you don’t have to be perfect. Whether you are married or single, a mother of 10 or never plan to be a mother, this site will have something you can use in your home. Since I am a mom of two (a 13 year old boy and 12 year girl, yikes! When did that happen!?) I will often talk about things from the angle of being a mom.

At Just Doing My Best, you will see lots of great looking ideas and recipes, but also some of the not so pretty ones. Ok, they are real flops. But, I am a real person like you and I goof just like you. (You goof too, right? right?) I want my website to be a reminder that all we can offer is our best and sometimes our best doesn’t look so good. And that’s OK. If we continue learning, then there is nothing to feel bad about. You can read more about me and how this blog got its name at my About Me page.

Since it is a party, I’d like to invite you to grab a cup of coffee or glass of champagne, get cozy, and check out some of my favorite or popular posts.

A friend told me about this quick breakfast sandwich that she makes for her teen son. I had to give it a try and my family loved it! It’s the perfect sandwich for school mornings because it is super quick and hearty.

Assembly is quick and easy. While your English Muffins are toasting, spray a small bowl with cooking spray/oil and crack an egg into it.

I break the egg up a little with a fork but my friend prefers to scramble hers. Microwave the egg (yes, you read that right!) for about 30 seconds. You will have to adjust the cooking time based on your microwave.

Add a little ham or sausage and cheese to your sandwich and you’ve recreated a healthy and quick version of a fast-food favorite!

If you like this idea, you might also like these Restaurant Copycat E-books. They are free to download.

**Edit: Thanks to all who entered to win and congrats to Soha M. who is the winner and has claimed the prize. **

Have you ever wanted to help a good cause but caught yourself short of funds? I’ve always been a huge proponent of the idea that there is always a way to help worthy causes regardless of your income.

Boxtops for Education is a perfect example of this. You can help your local schools by clipping those pretty pink box tops and sending them with a child to take to school. (Some schools offer contests, so you might be helping the child win a cool prize too!) Merely clipping Box Top coupons has raised over $300 million for our kids´schools. Now you can earn even more money for the school of your choice because from now through March 18, the Kroger Family of Stores is giving you the chance to get even more Bonus Box Tops.

All you have to do is register at www.RewardYourSchool.com and select the personalized offers that you would like to receive.

Once you register, you will automatically receive 5 Bonus Box Tops just for signing up. You will also receive custom offers for bonus box tops for purchasing participating General Mills products. The offers you select will then load onto your Kroger Shopper Card to be redeemed once you purchase the items. The great part is there’s no clipping! The Bonus Box Tops will automatically go straight to your chosen school. Just remember to scan your card when purchasing the participating items.

General Mills, via MyBlogSpark, provided me with a $25 Gift Card to Kroger and they want one of you to have a $25 gift card to the Kroger family of stores also!

Entering is simple. The first entry method below is mandatory, but the rest are optional and will gain you extra entries.

Mandatory entry – Leave me a comment telling me how you or your community supports your local school. OR, tell me some ideas you have for how to help worthy causes when you are on a tight budget.

Optional entries:

Visit www.RewardYourSchool.com and leave me a comment afterward that you visited

Follow my RSS Feed (upper right corner of this site) and leave me a comment on this post that you did.

Tweet this giveaway. Come back and leave a comment that you tweeted. Maximum of once a day please. Please either add my twitter handle, @JustDoingMyBest, to your tweet or leave the URL of the tweet from your feed in the comment section of this post.

Blog about this giveaway and leave the URL in the comment section of this post.

Good Luck!

Now the fun stuff:

This giveaway will close at 9pm EST Thursday, March 17. The winner will be chosen at random by random.org and will be contacted by email via the address he/she leaves in the comment info. The winner will have 24 hours to contact me before a new winner is chosen. This giveaway, my gift card and all Box Top info was provided by MyBlogSpark. Good Luck!

On a recent camping trip/fishing excursion with some guys from our church, my husband came home with this tip that he picked up from one of the guys when they were frying their fish. (Thanks, Jeff!)

When you are cooking and have excess grease to remove, use a slice or two of bread to absorb it and then just toss the bread into the trash. This works best with small amounts of grease and is a much neater and easier alternative to the “balance the pot and lid while draining into a small can method” that I still use for large amounts of grease.

FYI, this is just one of the many additional uses for heels of bread that I could have included in my “Five Ways to Stretch Bread” post.

How do you handle the nasty grease situation in your kitchen?

If you are a frugal-minded mom like me, sometimes we have to resort to a few tricks and secrets when it comes to feeding our family and watching the grocery budget. I’m also a big believer that every little bit adds up.

When we have an odd amount of cereal remaining that is not enough for a full bowl, I like to combine it with another cereal that would complement it well. For example, if your children love Chocolate Krispies, combine with the plain Rice Krispies. The round chocolate puffed cereal would go perfectly with a half a bowl of Kix. If your children love Frosted Flakes, add a few plain corn flakes.

Not only does this stretch the last bit cereal, it is healthier. Sometimes, I will serve the mixed cereal solely to keep sugar consumption lower.

Mommy Secret: Put the full sugar version in the bottom of the bowl so the children will have to eat their way through the healthier cereal for a sweet surprise.

adapted from Allrecipes.com

Ingredients:

1 pound ground beef

1 onion, minced

4 carrots, diced

3 celery stalks, thinly sliced

1/2 cup barley (add a tad more if you like thicker soup)

1 (28 ounce) can diced tomatoes

2 cups water

3 (10 ounce) cans beef broth OR 30 ounces of water and 2 Tablespoons beef granules (preferred due to stronger flavor)

1 (10.75 ounce) can condensed tomato soup

1 bay leaf

1 Tablespoon parsley

1 teaspoon minced garlic

1/2 teaspoon dried thyme

salt and pepper to taste

Directions:

1. In a large pot, brown the ground beef. Drain.

2. Stir in onion, celery, carrots, and barley. Add tomatoes, water, broth (or water and granules), and tomato soup. Season with the bay leaf, parsley, garlic, thyme, salt and pepper. Bring to a boil and then reduce heat. Cover and simmer for 2 hours, stirring often.

3. Remove bay leaf and serve.

This soup would be excellent alongside cornbread or biscuits.

Enjoy!

They are introducing a new dressy collection, just in time for Spring and Easter. (Hard to imagine if your area is covered by snow, but I promise, Spring really is on its way.)

The coupon expires February 18, 2010, so if your kids need new Spring clothes, I would use this one asap.
