Hamburger Barley Soup

“This is in the top three.”

That was my husband’s unsolicited reaction to this hearty soup. It’s one of his favorite top three dishes that I’ve made. I like to fix a hearty soup or chili whenever our area receives a good snowfall and this recipe has earned a place in my collection of family favorites.

Hamburger Barley Soup

Ingredients:

1 pound ground beef

1 onion, minced

4 carrots, diced

3 celery stalks, thinly sliced

1/2 cup barley (add a tad more if you like thicker soup)

1 (28 ounce) can diced tomatoes

2 cups water

3 (10 ounce) cans beef broth OR 30 ounces of water and 2 Tablespoons beef granules (preferred due to stronger flavor)

1 (10.75 ounce) can condensed tomato soup

1 bay leaf

1 Tablespoon parsley

1 teaspoon minced garlic

1/2 teaspoon dried thyme

salt and pepper to taste

Directions:

1. In a large pot, brown the ground beef. Drain.

2. Stir in onion, celery, carrots, and barley. Add tomatoes, water, broth (or water and granules), and tomato soup. Season with the bay leaf, parsley, garlic, thyme, salt and pepper. Bring to a boil and then reduce heat. Cover and simmer for 2 hours, stirring often.

3. Remove bay leaf and serve.

This soup would be excellent alongside cornbread or biscuits.
