Did you know you can blanch vegetables as a way of cooking ahead and saving time later? I didn’t and it was a very simple process. My children gave this broccoli recipe a thumbs up.
Sauteed Parmesan Broccoli
Ingredients:
1 pound broccoli florets
3 Tablespoons grated Parmesan cheese
1 teaspoon brown sugar
2 Tablespoons olive oil
1 teaspoon red pepper flakes
1/4 teaspoon salt
1/8 teaspoon black pepper
Directions:
- Blanch the broccoli up to two days in advance. To blanch: bring a pot of water to boil and carefully add the broccoli. Fill a large bowl with half water and half ice. Allow broccoli to cook 1-2 minutes, until it is tender. Immediately remove broccoli from boiling water and transfer to ice water. This stops the cooking process and keeps the bright green color. Leave in the water for 1-2 minutes. Drain and if prepping ahead, place broccoli in a dish that has been lined with paper towels. Use within two days.
- In a small bowl, combine the Parmesan cheese and brown sugar. Set aside.
- In a large skillet, heat the oil on medium high heat. Add the broccoli and red pepper flakes, salt and pepper. Stir to coat and cook while stirring 1-2 minutes. Remove from the heat and sprinkle with the cheese mixture. Stir to coat.

I think I will give these a try but I will leave out the sugar, I don’t like sweet veggies.

I make broccoli in a pretty similar way, and have done cauliflower this way too. Those red pepper flakes add so much!
