Wow. This sounds really yummy. I wonder what would happen if you made it without the mayo?

I think the mayo keeps it a little “lighter” in texture. I’ve seen variations of this recipe using sour cream and other substitutions. However, the substitutions make nice dip, but it is no longer a “copy-cat” version of Jalapeno Poppers.
