This was the first time I made twice-baked potatoes, but I’m now convinced that they are worth the extra time. Plus, this recipe is the perfect dish for a few of the gargantuan potatoes my guy picked up at Costco.

3 large baking potatoes
1 Tablespoon butter, melted
1 pound ground beef (You could get away with a half pound if you substitute with extra veggies, i.e. onions, peppers, shredded carrot, tomato, etc.)
1 can diced tomatoes, undrained
1 (1.25 ounce) package taco seasoning
1/2 cup shredded Cheddar
optional:
sour cream
sliced green onions
Directions:
Scrub and pierce potatoes. Bake at 375 for one hour or until tender. After cooling a bit, cut potatoes in half lengthwise. Scoop out the insides of the potato, leaving a thin perimeter. Refrigerate the extra potato for another use. Brush inside and outside of the potato shells with butter.
Place on an ungreased baking sheet, cut side up, and bake uncovered for 20 minutes at 375. While the potatoes are in the oven, brown beef over medium heat until no pink remains. Drain. Add taco seasoning and undrained tomatoes. Bring to a boil and then reduce heat. Allow to simmer uncovered for 20 minutes. Spoon beef mixture into potato shells and sprinkle with cheese.
Bake, uncovered, for 5-10 minutes or until cheese is melted. Top with sour cream and onions.

I’ve never made twice baked potoates. I’ll have to give these a try with the huge Idaho potatoes my DH brought home from work. Anything taco has got to be good!
