After fixing Pumpkin Pancakes over the weekend, I decided we needed another pumpkin treat. Actually, the leftover pumpkin in the fridge was taunting me and I didn’t want to see it go to waste.
This recipe was rated a 5 of 5 by my children and I have to agree. The flavor and texture was light and perfect. It also used the exact amount of pumpkin that I had left from the Pumpkin Pancakes. Bonus!

Ingredients:
1 cup canned pumpkin
1 cup sugar
1 3/4 cups rolled oats
1 egg, beaten
1 1/2 cups flour
3/4 cup butter, softened
1/2 teaspoon baking soda
1/4 teaspoon nutmeg
3/4 teaspoon cinnamon
1 teaspoon salt
optional – 1 cup raisins or chopped nuts
Directions:
1. Preheat oven to 400 degrees.
2. In a large bowl
, stir together flour, sugar, baking soda, nutmeg, cinnamon, and salt.
3. Add softened butter to dry mixture and stir until mixture is crumbly.
4. Stir in egg, pumpkin, oats, raisins or nuts, if you are using them.
5. Drop by teaspoonfuls onto an ungreased cookie sheet.
6. Bake 15 minutes or until done.

We made a pumpkin cookie this past weekend… shaped them into pumpkins and decorated “faces” with chocolate chips and raisins
