These pancakes are a delicious way to welcome Fall. My children and I tried them and loved them, even though we didn’t have any chocolate chips on hand.
Chocolate Pumpkin Pancakes
Ingredients:
1 cup all-purpose flour
1 cup quick cooking oats
1/4 cup brown sugar
2 teaspoons baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon salt
1 cup milk
1 egg, beaten
3/4 cup canned pumpkin
2 Tablespoons vegetable oil
3/4 cup semisweet chocolate chips
Directions:
- In a large bowl, stir together flour, oats, brown sugar, baking powder, cinnamon, cloves, and salt. In a separate bowl, lightly beat together the milk, egg, pumpkin, and oil.
- Gently stir flour mixture into the pumpkin mixture and blend just until moistened. You can either mix chocolate chips in now or save to make jack-o-lantern faces later. Allow mixture to rest about 15 minutes.
- Heat a lightly greased griddle over medium heat.
- Pour batter, approximately 1/4 cup at a time, on onto hot griddle. If opted for jack-o-lantern faces, create the face now in each pancake. Cook until there are bubbles on the top and then flip. Cook until golden brown on the other side, usually about 5 minutes per side.
Err on the side of making the pancakes small and do not allow the stove to get too hot. These pancakes require a longer cooking time to allow the middle to set.
