My mom baked these often when I was younger. They are easy to prepare and require only pantry staples. These light and fluffy Applesauce Muffins are the perfect dessert when served warm on a chilly evening.

Ingredients:

1/2 cup softened butter

1/2 cup sugar

2 eggs

3/4 cup applesauce

1 3/4 cup flour

1 Tablespoon baking powder

1/2 teaspoon salt

Reserve for muffin tops after baking:

1/4 cup melted butter

1/2 cup sugar mixed with 1/4 teaspoon cinnamon

Directions:

  • Cream softened butter and sugar until fluffy.
  • Beat in eggs, one at a time, until light and fluffy.
  • Beat in applesauce.
  • Stir together flour, baking powder, and salt.
  • Add to butter mixture. Stir just enough to moisten.
  • Spoon into 36 greased mini muffin cups. (Larger muffin tins may be used, just adjust the baking time.)
  • Bake in a pre-heated 425 degree oven for about 15 minutes.
  • While warm, dip tops into melted butter and cinnamon sugar.

Thanks for sharing this recipe at The Grocery Cart Challenge. I had some applesauce that I didn’t want to waste and all the ingredients in my cupboard so I tried this recipe this evening. Turned out great. We’ll enjoy these muffins this week.
