I think I found a new family favorite! It is a nice compromise to ordering out and in comparison to restaurants, it’s a cheaper alternative. It does cost more than our average meal, so I plan to fix it again on the days we want something special.

Ingredients:
1/2 cup pesto sauce
1 (12 inch) pre-baked pizza crust
2 cups cooked chicken breast, cubed. (Next time you bake or grill chicken, prepare an extra couple of pieces for this recipe to make preparation even easier.)
1 (6 ounce) jar artichoke hearts, drained (My store did not have the jar, so I used a 13 ounce can and it worked quite well.)
1/2 cup shredded fontina, mozzarella or Italian Blend cheese.
Directions:
1. Preheat oven to 450 degrees.
2. Spread pesto sauce evenly over the crust. Place chicken and artichoke hearts over the sauce. Add cheese.
3. Bake for 8-10 minutes until cheese is melted and edges are light brown.
So easy and delicious!

That sounds yummy! Hubs won’t eat artichokes, so this is one of those recipes I’d get to eat all by myself!

I make pesto pizza on occasion but I have never made it with chicken, sounds good!
